The most delicious, moist, coffee cake recipe; a recipe that you will hold on to for years to come. Just the right amount of softness and crunch paired with the spicy flavors of the season. I can’t wait for you to try it yourself. This recipe is infused with half a 600mg bottle of CannaBliss Spice Syrup. It is easy to use in this recipe, as you can replace the sugar 1:1 with this syrup. Yay, no math for that part! You’ll find this syrup is versatile and with it being broad-spectrum you’ll be medicating with a heavier hitting edible. Get your syrup at your favorite dispensary and ask for it by name!



Yield: 4 – 75mg mini loaves Prep Time: 45 minutes Bake Time: 60 minutes Tools to make this recipe: 4 -mini loaf baking dish, bowls, measuring cups/spoons, hand mixer, spatula.

Ingredients

Coffee cake

  • 4 oz butter

  • ½ cup +2 tablespoons sugar

  • 1.9 oz Cannabliss Spice Syrup, 300mg (½ bottle)

  • 1 ½ teaspoon vanilla extract

  • 3 eggs

  • 1 ¼ cups ap flour

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 cup sour cream

Cinnamon Sugar Filling

  • 1/4 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 teaspoon cinnamon

Crumble Topping

  • 6 oz flour

  • 4 oz brown sugar

  • ½ teaspoon salt

  • 1 teaspoon cinnamon

  • 4 oz of butter, melted

Instructions

The medication. Think about how much medication you want to make each slice. This recipe makes 4 – 75mg mini loaves slices. Know that if you want a stronger dosage then you’ll need more infused syrup, so you’ll need to reduce the volume of sugar in the coffee cake by how much you increase the infused syrup. Consider what dosage is right for you before you do anything. The filling. Combine together and set aside. Crumble. Combine all the ingredients except for the melted butter. Slowly add the butter until a crumble texture forms. The easiest way to do this is to get the butter evenly soaked through, pick up a large chunk of topping and rub it between your hands over a tray and watch the crumbles fall down. Assembly: Spray mini loaf tins with pan release spray.. Pour ⅛ of your batter into each tin and spread evenly. Cover each tin evenly and generously with cinnamon sugar then top with remaining batter. Sprinkle on your crumble topping and bake in the oven for 50-55 minutes. Make sure that you check your cake with a skewer. It’s done when it comes out clean.

Notes:

Variations: Add the apple pie filling from last month’s recipe or simply add pecans if you’re craving a little more crunch. Dairy-free: substitute dairy-free sour cream for the sour cream and dairy free butter for the butter. Country crock makes decent plant-based butters. I also found some good dairy-free sour cream at Sprouts. Toaster series: I don’t suggest using a toaster unless you have lots of time. It works, but it took about 2 hours to bake in mine.
